How to prepare Matooke - the fast method - (The Diaspora Way):
Step 1 - Get some green bananas "matooke".
Step 2 - Peel off the skin with a knife and oiled hands to eliminate the sticky sap off your hands.
Step 3 - Run cold water into the pan containing bananas and wash off the sticky sap.
Step 4 - After washing peeled bananas and draining the water as shown in step #3, add cold water into pan containing peeled washed bananas to the level slightly over the bananas. Cover the bananas with the banana leaves if available.
Step 5 - Cover with the top of pan. Place on stove and cook for about 45 minutes. While it is cooking, watch the level of water. If water runs out through steam before the bananas are soft ready, add more hot water and cook more until it is ready.
Step 6 - After the bananas are cooked, drain out the water as illustrated in step 7.
Step 7 - Use cooking towels or wear cooking gloves to hold hot pan as it is shown. Let remaining water run out.
Step 8 - Use a wooden masher to mash cooked bananas into a smooth paste. Before you begin mashing, switch on the oven and set the temperature to 350F.
Step 9 - Have aluminum foil laid out on counter. Direct contact of aluminum foil with food has been associated with health risk. Please use appropriate precaution.
Step 10 - Get banana leaves from the fridge and rinse with warm water. Place the banana leaves on top of the aluminum foil in step 9.
Step 11 - Place the mashed bananas paste on laid down banana leaves in step 10.
Step 12 - Wrap the mashed bananas paste in the banana leaves quickly to avoid getting the mashed banana hardened.
Step 13 - Complete wrapping with the aluminum foil over the banana leaves.
Step 14 - After the bananas are wrapped well place in the oven.
Step 15 - Put it in the oven and heat for about 40 minutes. This process is called "okubobeeza etooke" diaspora way. Alternatively, you can use Power Pressure Cooker and exclude aluminum foil. Put small water and banana leaves in the pot, and then put the mashed bananas paste wrapped in bananas leaves on top. Cover the pot and cook low.
Step 16 - After the process in step 15, the cooked bananas a gorgeous yellow color and ready to be served.
